Cranberry Banana Coffee Cake

I can’t tell you how many times I’ve had guests over and this was my go-to coffee cake recipe. Many people seem to think they wouldn’t like cranberries in their breakfast dessert, but they always love this one. Sure, you could always go buy donuts or coffee cake from the supermarket, but nothing is like making your own, and it’s just as easy! Cranberry Banana Coffee Cake
I’ve always been one to utilize the space in my freezer too. If I’ve had time to make one of these Cranberry Banana Coffee Cakes, then I’ve had time to make two. Making one ahead to freeze for later is always a good idea. That way, if you have an unexpected guest show up, you have something to pop in the oven. Cutting this coffee cake and serving it to your guests is a sure sign of love!
Step One: Gather Ingredients
Preheat the oven to 350 degrees. Gather the ingredients so they are ready to go.
Step Two: Whisk Dry Ingredients
Prepare a 9 x 13 inches baking pan with nonstick cooking spray. Whisk together the dry ingredients: flour, baking powder, ground cinnamon, salt, and ground allspice.
Step Three: Cream Butter and Sugar
In a large mixing bowl, cream the butter and sugar until light and fluffy, for 5 to 7 minutes. Beat in eggs and vanilla. Then, add the bananas and mix until combined. Add the dry ingredients to the cream mixture and beat just until combined.
Step Four: Spread the Batter Evenly
Spread evenly into the prepared baking pan.
Step Five: Add Cranberry Sauce
Top with dollops of cranberry sauce.
Step Six: Combine Dry Ingredients
In a small bowl, combine the brown sugar, chopped pecans, and flour.
Step Seven: Stir In Butter
Stir in the butter.
Step Eight: Sprinkle Crumble Over The Top and Bake
Sprinkle over the top of the cranberry sauce. Bake for 45 to 50 minutes. Cool in the pan on a wire rack. Slice into squares and serve warm.

Cranberry Banana Coffee Cake Recipe
- 1/2 cup of butter, softened
- 1/2 cup white granulated sugar
- 2 large eggs (at room temperature)
- 1 teaspoon vanilla extract
- 2 cups white all-purpose flour (I use bread flour)
- 2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/4 teaspoon ground allspice
- 3/4 cups mashed ripe bananas (about two bananas)
- 1 cup of whole-berry cranberry sauce
- 1/2 cup brown sugar (packed)
- 1/2 cup finely chopped pecans
- 2 tablespoons all-purpose white flour (I use bread flour)
- 2 tablespoons butter, melted

What can I serve with this coffee cake?
Have you ever thought about what you can serve with this coffee cake? One of my favorites to serve with coffee cake is always coffee. To me, black coffee tastes super delicious with this recipe. I can never get enough of the combination. If you have kids eating this dessert with you, then don’t be afraid to make them a nice warm cup of hot chocolate or a glass of milk!
How do I store this?
You can store this Cranberry Banana Coffee Cake in the fridge for about a week. When you place it in the fridge, make sure you cover it tightly with plastic wrap so it doesn’t dry out. If you end up leaving the coffee cake on the counter, it won’t hurt it, but it may not keep as long as it would when stored in the fridge.
Can I freeze this coffee cake?
You can easily freeze this coffee cake, you just need to have the right materials to do so. You can transfer the coffee cake to a freezable container or you can wrap it in aluminum foil. If you have plastic wrap this also works. You should bake the coffee cake before you freeze it. Make sure you allow the cake to cool completely before you freeze it.

You will probably think I’m an idiot, but I’m not, just getting older. You sent me the instructions for using the spice cake and pumpkin and I CANNOT find where I saved it!?
Wasn’t it just mixing the cake mix and pumpkin (150z. together) then baking? At 350 for how long.

Hi Suzanne, here is the recipe, but I’m going to make it a post with a printable: Hi Suzanne, yes, it’s Leanne’s recipe. One cake mix (Spice) and one 19-ounce can pumpkin puree (not pie mix). Combine, fill 12 greased muffin tins. Bake at 350 degrees for 25 minutes or until a toothpick comes out clean. They are super moist! Linda
