How To Make The Best Mini Tacos
A few years ago I went to a neighborhood party and someone brought the best mini tacos! They are not the regular tacos that some of us have made for years. I love fried corn tortillas and Mark prefers the ready-made ones from the store. Well, these mini tacos were made with wonton wrappers.
What’s really nice about these mini tacos is that they are crispy on the outside and moist on the inside. Oh my gosh, you will love these. Now, if you are worried about the Rotel tomatoes being too spicy, just use diced tomatoes (drained) instead.
Do you love Mexican food as much as I do? Let’s talk about the foods that would go great with these mini tacos.

I make a low carb “taco” using mini bell peppers. I make my taco filling (meat, seasoning). Cut the mini bell peppers in half the long way and remove seeds but leave the stem on. Fill will seasoning and top with grated cheese. Bake in the oven until the cheese is melted but the pepper is still a bit crunchy but hot. (I have also made these in the microwave). Yum! I call them Taco Bell Peppers – throws people off as they think that Taco Bell sells them!!
Hi Leanne, oh my gosh, these sound delicious and easy! I have some ground beef in the freezer and those mini bell peppers in the frig. I have got to make these! It’s one of those “why didn’t I think of that”!!! I LOVE it. Linda
Linda, thank you for this recipe. It is so versatile. This morning I rehydrated hash browns and fried them up with chopped onions, shredded carrots, finely chopped tender leaves of chard, chopped chicken. Then I assembled with the cheese like your recipe with the won ton wrappers. It was delicious. Guests always seem to like this appetizer!
Hi Carol, oh my gosh, I love hearing this!!! There is something fabulous when you see homemade appetizers! People love homemade stuff. I like the combination you came up with. The possibilities are endless. Stay well, stay safe, Linda
