Since going low carb, I have gotten tired of not having the “crunch” when it comes to tacos. Taco salad is great, don’t get me wrong but sometimes I just want the crunch! So, I have discovered a couple of ways to get at least a semblance of crunch on occasion: 1) cheese shells – take grated cheese (my fave is a combination of sharp cheddar and pepper jack) and place a good sized pile on a baking sheet lined with parchment paper. Spread the cheese out so it bakes evenly in a round. Bake at 350F to 375F until well melted and a bit browned around the edges. Remove from oven and let cool slightly until the cheese doesn’t stretch. Fold the cheese round over a wooden spoon handle to create the shape of a taco shell. Let cool completely. Fill as you would an taco. Be sure to lean over the plate as you will get a bit of dripping because the cheese is not solid like a shell would be! and number 2) chaffles – go to pinterest and search it out! it is basically just a cheese and egg waffle that can be customized in so many ways. The basic directions are to take grated mozzarella (about an ounce) and an egg, Beat the egg, (some mix the cheese into the egg and some don’t) and place the ingredients on a mini waffle maker (Dash waffle maker is most often suggested). I made 2 chaffles last night for a BLT and it was surprisingly good. The longer you cook the chaffle, the crunchier it gets. Then, once done to your satisfaction, you can bend it and fill as for a taco. I’ll try that one of these days.
The only things that I can say about the two methods is that if you have a problem with fat, the cheese alone is a big issue. If you are just going low carb, this might be a way to have your taco and eat it too (at least on occasion.
Hi Leanne, great tips on how to make a low carb shell! I know a lot of people are eating Keto style food. If I can have salsa I can eat anything! LOL! Linda
