This Pasta Fagioli soup mix in a jar is part of my series of making soups that can be stored in our pantries. Mark and I love a hot bowl of soup with a slice or two of homemade bread. What I like about this recipe is I made it a vegetarian soup mix in a jar, but you can always add some leftover cooked ground beef when you cook it yourself.

Don’t you love those meals you start in a slow cooker and it cooks throughout the day. You know dinner will be ready tonight with very little work? I sure do. This soup has a tomato base which is one of my all-time favorites, add some beans and a little pasta and it’s a little bit of heaven in a bowl.

When I make my sourdough bread, I freeze two loaves for soup night so it’s ready to go when the soup is cooked, life is so good! I thaw it the night before and it’s ready when the slow cooker finishes cooking my dinner.

Ingredients for the Jars

  • Small pasta shells (I used Ditalini)
  • Great white northern beans
  • Pinto beans
  • Kidney beans
  • Minced Onion
  • Spices
  • When ready to make:
  • 10 cups water
  • 28-ounces diced tomatoes
  • 2 cups chopped carrots
  • Grated Parmesan cheese (as a garnish)

These are great stored in your pantry or you can gift them to a family who is expecting a baby or someone who is under the weather. Who doesn’t love a hot cup of soup, right? Nothing says love like homemade soup mix in a jar.

How to Assemble Jars

The first thing to do is gather the ingredients, of course, you can always add more of your own favorite spices.

Grab a wide-mouth one-quart mason jar (32-ounces) to layer some of the ingredients shown above. Start with the white beans, pinto beans, and kidney beans. Be sure and watch for small rocks in the beans.

Making Jars

Place the pasta in a baggie and place it on top of the beans. Put the seasonings in a small bag and close it. The seasoning bag will go on top of the pasta baggie and under the lid. It’s very tight, so squeeze the air out of the baggies. Seal the lid using a FoodSaver, if you so desire. Put the canning ring on and add some twine with a tag and it’s ready to put on your pantry shelf or give to someone in need.

How To Make Pasta Fagioli Soup

Step One

Please spread the beans out to look for rocks or debris, I didn’t find any today, but I have found some over the years.

Check through the Beans

Step Two

Grab a strainer, and wash the beans thoroughly.

Rinse the beans with water

Step Three

Add all of the ingredients to the slow cooker (I used a 3-1/2 quart slow cooker).

Step Four

Add the water, and turn it on high for 7 hours, and then check the beans for doneness. Mix in the pasta, the tomatoes, and chopped carrots. Cook another 2-3 hours until the carrots and beans are tender.

Finished Product

Here’s the finished product, it’s a rich and savory soup with grated/shredded Parmesan sprinkled on top. I served it with my SourDough French Bread!

How To Store Leftovers

I love these Silicone One-Cup Divider Freezer Tray containers. You can pop one section (1-cup) out and put it in a bowl to microwave anytime. I use them for so many things. We freeze one-cup servings of leftovers all the time. The “meal” pops right out after freezing because it’s a no-stick silicone container.

Ingredients

  • 10 cups water
  • 28 ounces diced tomatoes
  • 1-1/2 to 2 cups chopped carrots
  • 1/2 cup of sugar (I always add a bit of sugar to my tomato based soups), this is an optional item.
Instructions
  1. Grab a wide-mouth quart mason jar (32-ounces) to layer some of the ingredients shown above. Start with the white beans, pinto beans, and kidney beans. Be sure and watch for small rocks in the beans. Place the pasta in a baggie and place it on top of the beans. Place the seasonings in a small bag and close it. The seasoning bag will go on top of the pasta baggie and under the lid.

Cooking the Pasta Fagioli Soup
  1. When ready to cook, remove the seasonings, and the baggie with the pasta. Please rinse the beans before placing them in the slow cooker. Set the baggie of the pasta aside. Add 10 cups of water, and the seasoning bag to the beans in the slow cooker. Cook on high for about 7 hours or until the beans are almost tender. Add the diced tomatoes, chopped carrots, pasta, and cook on high for 2-3 more hours. Serve warm with shredded Parmesan cheese, if desired. Enjoy.

What Jars Can I Use?

I use wide-mouth quart jars (32 ounces) because they are easier to fill and hold a bit more than regular-mouth quart jars. Although any 32-ounce jar would work, you may not be able to use a FoodSaver with them.

Should I use a FoodSaver to seal the jars?

Mark and I used a FoodSaver to seal the jars, but we didn’t add an oxygen absorber. It’s a personal preference, but we will eat these within one year, so I’m good with just sealing them.

Can I store my soup in bags?

Yes, you can store the soups in freezer bags if you want to take them to someone without giving up a jar. Just add a tag to it for the instructions. Keep in mind, sometimes pasta can tear through plastic bags.

How long will these jars store safely on my pantry shelves?

As a Master Canner Preserver, I always say if we make it, it’s a year. We don’t have the processing tools to store them long-term. But, we must be free to do what feels right for us. I only make what I will use up in one year, that’s how I roll.

Final Word

I hope you are enjoying my soup mixes in a jar. If you want to make them in pint-size wide-mouth jars it would be very easy to cut the recipe in half. Mark and I like to make larger meals and freeze some for another day. My goal is to teach people how to use beans, pasta, and rice. We can do this, my friends, we must.     Same here Linda, I too love a hot soup with sour dough bread. Maybe even garlic bread. I have printed off the recipe and plan to make it soon. Even if it is summer I like soup.     Although I’d miss the nice chunks of tomato, I’m wondering if I could substitute tomato powder? And if so, how much would you recommend?

    1. Hi Amy, thank you for the 5 stars. I thought about opening some of my tomato powder but I hesitated. I want to save it for emergencies, I need to use it because it only has an 8-year shelf life. One year when opened. I would look at the brand you have and see what you need to equal the 28 ounces. I looked at my Thrive Life tomato powder and there are zero instructions on how to reconstiute it. I looked on their website, nothing. I watched YouTube by Thrive Life Chef Todd, he talked about tomato sauce, ketchup, but not equivalents. I would make one jar of soup and add and taste it after adding some tomato powder. You may have to add a little more water to make up the tomato juice in the diced tomatoes. I was shocked not to see ratios. So, we’re back to cooking from scratch, by trail and error. Start with a little add more to see if you like the taste. Linda

  4. Linda, Pasta Fagiole is my favorite soup. Over the years I’ve tried copying the Olive Garden recipe, but have never got it exactly right. I store soups and other dehydrated meals in jars that I add oxygen absorbers OR vacuum seal and I’m definitely trying this one soon. Thank you for the recipe. Oh, I always use Ditalini when I make it.

    1. Hi Ray, I would love to make the Olive Garden Fagioli soup, maybe between the two of us, we can get it exactly like it!!! The Ditalini is the best! Let’s compare spices!! Linda

      1. I think the main difference is I use Mild Italian Sausage, fresh grated carrots, diced tomatoes and celery from my garden. Likewise for the garden grown garlic. Of course that won’t work for a dehydrated soup in a jar recipe.

        1. Hi Ray, oh, the mild Italian sausage, that’s it! Of course fresh vegetables we can always add to our soup as we make it. Homegrown garlic is the best! I never thought about grating the carrots for soups, why didn’t I think of that????? This is awesome! Linda

    Love these soups in a jar series and this one looks terrific!!! So, does this recipe make one quart jar? The link up in the beginning says it is for 32 oz wide mouth but it is actually for the 16 oz pint jars. What is nice is that it can be vegetarian or just add some meat and it is a perfect whole meal. I eat soup all year long! And I now have to try your bread to go with it and like someone said, garlic bread would go great with this Fagioli soup. Thank you for the recipes and the special tools that also making the cooking and storing easy. I am ordering the Souper Cubes and also the white canning funnel. I see such advantages in both of these items. Since I make my own chicken bone broth, the Souper Cubes will come in so handy. Love that you can take the frozen cube out and store in plastic bags in the freezer to free up the Souper Cubes for the next things you need to freeze.

The broth is a perfect example of how to use them. The thing I like about the Soup Mix in Jars is that we can add more spices depending on our own taste. I love being able to make like 12 jars and line them up on my shelves ready to grab in the morning. I love soup too!!! Linda
