The Best Marinated Carrot Salad Recipe In The World

This is the best marinated carrot salad recipe in the world! Oh, my gosh, Mark and I were invited for dinner the other night at some friend’s house. Mark mentioned to them that I am trying to stay clear of meat and dairy products. First of all, I try not to tell anyone about the healthy way of life I am working on. So this darling couple had every vegetable you can imagine on beautiful dishes to munch on and chitty chat around the table, oh how I loved this!

They fixed the best salmon on the barbecue for the three of them and I loved the rice, salads, and all the fresh vegetables. Well, I asked if I could share this marinated carrot salad recipe on my blog. She quickly gave me the recipe and then I passed it on to my daughters because I knew this was one they would all love!

You Can Approach Meal Prep in Steps

Here’s the deal, you can use sliced carrots or baby carrots for this recipe. My mouth is watering just thinking about eating this for lunch. My pressure cooker was used to cook the carrots last night and I chilled them to make the salad today. I used my Fagor pressure cooker on high with one cup of water and set it for three minutes. I used the quick release and carefully removed the lid and drained the carrots.

Any pressure cooker or pan can steam carrots, but I love my Fagor pressure cooker since it saves me precious time. Mark and I eat a lot of carrots so this recipe is a hit at our house! I doubled the dressing ingredients because I knew I would be adding more carrots over the next few days. You can also use this dressing on other vegetables, it’s so yummy! You can use sliced carrots, grated carrots, or baby carrots.

You may be asking yourself “Why is she using her pressure cooker to cook the carrots?” Well, I always have 10 things going on at once. With this unit, all I have to do is put the carrots in the pan, add one cup of water, lock the lid, and set it for 3 minutes on high. That’s it, set up and go do the laundry or whatever. Yes, I could have boiled/steamed them but then I would have had to watch the pot on the stove. Please remember when using a pressure cooker to be sure and check your manual. My two different pressure cookers state “Do not fill more than 2/3 full” to allow for the pressure to build up.

Ingredients
  • 5 cups steamed carrots drained (I used a pressure cooker, 3 minutes on high with one cup of water)
  • 1 medium white onion thinly sliced
  • 1 small green yellow, or red pepper chopped into bite size pieces
  • Dressing:
  • 2 cans cream of tomato soup
  • 1 cup vegetable oil
  • 1 cup sugar or less as desired
  • 1-1/2 cups cider vinegar
  • 2 teaspoons prepared mustard
  • 2 teaspoons Worcestershire sauce
  • 2 teaspoons salt
  • 2 teaspoons pepper
Instructions
  1. Steam the carrots and chill overnight. Add the remaining vegetables with the carrots in a large bowl. Combine the dressing ingredients in a separate bowl and pour over the vegetables. Chill in a covered container. Enjoy!

  2. This seems to be a variation of the classic Copper Pennies carrot salad where the carrots are cut into round “coins” .

    1. Hi Joanne, I have both the Fagor 3-in-1 and the Instant Pot 7-in-1 pressure cookers. They are both 6-quart electric pressure cookers. I took several classes from Chef Brad and I worked in the kitchen store where he taught several Fagor electric pressure cooker classes. I went to every class he taught while I was there teaching my own classes. The store sold Fagor and so I bought one. That was about 4 or 5 years ago. Chef Brad still recommends the Fagor to this day. I decided to buy an Instant Pot in December and I have used it twice. I wanted to compare the two myself because I kept hearing all the buzz about the Instant Pot. I decided before I gave all four of my daughters a Fagor electric pressure cooker, I would test the Instant Pot. After using the Instant Pot twice, I ordered all the girls a Fagor for Christmas. Actually I ordered a second one for one daughter because she uses it every night.
      They are both good machines, but I think the Fagor is sturdier and easier to use. I was very disappointed in the Instant Pot manual. It was so vague about how much liquid needed to be used for the pressure cooker. The Fagor uses one cup liquid minimum and more for beans and grains, of course. I did order a stainless steel pot for the Fagor cookers for each daughter. The Instant Pot comes with a stainless steel pot. I think they are both great machines, but I recommend the Fagor when I teach classes. I hope this help, sorry it’s so long. Linda

    Thanks for the reply. The Insta Pot has been getting quite the reviews here also. I knew you taught classes and probably had used the Insta pot as well. Can I get adopted?!? I will probably get the Fagor and recommend it as well because of your comments. Thanks again for all you do. Another question: With your small house, how do you store all your food, bug-out bags, first aid stuff, etc. We are in our son’s basement apartment. Would love how to know how you have stashed your stuff (pictures maybe).

    1. Hi, Joanne, you are so funny, I wish we lived closer so we could work together as neighbors. I’m going to send you a note about the storage in a private email. I will send pictures in that email. If I forget please remind me. I’ve been having trouble with my website hosting and I’m moving to another hosting company. My website keeps going down and has for over three months now. Not good. My house is 1900 square feet with a three car garage. LOL! I think they built the garages for small cars, there is no way you could get three cars in those stalls. My emergency preparedness stuff is stored on shelves in the third stall. I have water bricks under a queen bed, Blue Cans behind a dresser, and so much more. All my food storage has to be stored in the house because of the hot temperatures here in Southern Utah. Linda
