Broccoli Cashew Salad

This broccoli cashew salad recipe is so versatile and easy to make at the last minute for any get-together. It’s healthy, crunchy, and tart, with a homemade dressing anyone can make.

This salad is perfect to take to a family reunion, church luncheon, or Sunday dinner! This salad is healthy and so easy to throw together for people stopping by to visit.

I love to make something healthy for my family and this fits the bill. It’s packed with fresh fruits and vegetables and crunchy cashews! The homemade dressing is made with items from our refrigerator and pantry.

The dressing is creamy, not too sweet and compliments all of these veggies and fruits in one bowl. The cashews add a little bit of heaven to the salad!

We served this salad to the family on Sunday, and everyone loved it! Be ready to hand out the recipe if you take this broccoli cashew salad somewhere.

Step One: Gather Ingredients

Gather the ingredients for the recipe. Chop the broccoli florets, chop the apples, chop the pears, and chop the purple onion.

Step Two: Prepare Broccoli Florets

I like to cut the florets off of the broccoli stems and soak them for a couple of hours in cool water. The reason I do this is I believe it brings out a beautiful green color in the broccoli. Then I drain them.

Step Three: Place Ingredients in Bowl

Place the broccoli, chopped apples, chopped pear, purple onions, cashews, and cranberries in a large mixing bowl. Set the bowl aside and make the salad dressing.

Step Four: Add Mayo, Sour Cream, Etc. & Mix – Serve

Grab a small bowl, and combine the mayonnaise, sour cream, lemon juice, honey, and salt. Stir until mixed through. I used a wide-mouth pint mason jar.

Finished Product

Pour the salad dressing over the salad and stir it in to cover the ingredients. Enjoy.

How do I store the leftovers?

I store it in an airtight Tupperware-type container. You will love the salad the next day as well!

How long can I store this salad after making it?

This salad is great for 1-2 days with the dressing on it. If you keep the dressing separate, it will last up to 4 days.

Can I add other nuts to the salad?

I have used pinenuts and peanuts and they work out great!
