Pumpkin Pecan Chocolate Chip Cookie Recipe

Do you love freshly baked cookies? Then you will love this pumpkin pecan chocolate chip cookie recipe. This recipe makes only 18 cookies which works great for a small family or a college student, right? I remember making some pumpkin cookies when I was raising my girls and the recipe made 6 dozen cookies! It was awesome when we had friends dropping by for a glass of milk and a few cookies. Nowadays, I like making smaller batches and this cookie recipe fits the bill! The cookies are soft, chewy, and moist, gotta love it!

Pumpkin Pecan Chocolate Chip Cookie Recipe

These are all the ones I use and LOVE!

This recipe is so awesome because you stir the ingredients in a bowl, no mixer is needed. Boy, does this bring back memories of making cookies with my daughters! I remember my girls sitting on the kitchen counter while we measured the ingredients into the bowl, I love those memories!

Grab a medium bowl and combine the pumpkin, sugar, oil, and egg.

In a separate mixing bowl, sift together the flour, baking powder, cinnamon, and salt. Dissolve the baking soda in the milk.

Add all three mixtures together, then stir in the vanilla until mixed thoroughly. 

Fold in the chocolate chips and pecans.

Spoon the batter onto a greased cookie sheet, (about 1 tablespoon scoop).

Bake in a preheated oven at 350 degrees for about 10 minutes. Serve and enjoy.
