How To Make A New Kind Of S’mores
You’ve heard the saying, “Sometimes you just gotta have fun.” Well, for me, it’s in the kitchen making S’mores today. I love making chocolate chip cookies that are soft, moist, and gooey, and I love making S’mores. Recently, I taught a gardening class at a local church group, and they served typical classic S’mores with graham crackers, marshmallows, and Hershey chocolate squares from Hershey’s bars. It was raining very heavily, so they broiled them in the oven. They were delicious!
So, you can see today that I made a slightly different recipe using the same ingredients plus chocolate chip cookies. If you have grandkids, this will be so fun to make with them. You could also teach your local church group how to make these for a cooking or baking experience. We really need to teach kids how to cook from scratch if they aren’t learning how to do it at home.
I like to change up flavors and textures when I make various recipes. This is particularly the case when it comes to a chocolate chip cookie recipe. You can make a few changes and get more chewiness, a different flavor with semi-sweet chocolate chips, or if you add some nuts to the chocolate chip cookie dough.

Graham Crackers With Frosting
Did you grow up eating some frosting on graham crackers? If my mother had leftover frosting after making a cake, we would lather some graham crackers with the frosting in between to make a sandwich-style treat. Aren’t memories fun?

Let’s Make The S’mores
I wish you could smell the aroma when making these gems! I’m not going to lie; one of my addictions is chocolate! I have so many fond memories of making s’mores when we took our kids camping and used a campfire to soften and lightly cook the marshmallows. I hope you enjoy making these s’mores cookies as much as I do.

Cream The Ingredients
Cream the butter, eggs, sugar, brown sugar, and vanilla. Then, I added the remaining ingredients for the cookies, except the chocolate chips. It’ll be too thick to try and use a whisk, so make use of your mixer for best results.

As mentioned, a hand mixer or stand mixer helps smooth and mix the cookie dough. I’ve tried using a whisk and wooden spoon to mix the dough, but it was a lot of work.

Fold The Chocolate Chips Into The Dough
Then, you fold the chocolate chips into the mixture.

Scoop The Dough
Now, grease the cookie sheets or use a parchment paper-lined baking sheet, and scoop the cookie dough balls onto the sheet. Preheat the oven to 350°F (176°C) and bake for about 8 minutes.

Time To Broil
After baking the cookies, top each with a marshmallow and broil them quickly! I did it in my oven for about 30 seconds. This helps turn the marshmallow in each cookie into a more gooey marshmallow.

Add The Chocolate & Layer
After lightly browning the marshmallows, remove the sheet from the oven and top each cookie with a mini Hershey’s chocolate square from a milk chocolate bar. Then, layer the cookies as shown above. They are tall and super fun to make and delicious to eat! I let my cool on a wire rack I’ve used for many years as an effective cooling rack.

S’mores – A New Recipe

- 1/2 a cup of melted butter (room temperature)
- 1/2 a cup of sugar
- 1/4 a cup of brown sugar
- 1/2 tablespoon of vanilla
- 1 egg
- 2 cups of flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup of chocolate chips
- Graham Crackers
- Marshmallows
- Mini Hershey's Chocolate Bars

Preheat the oven to 350°F (176°C).

Cream together butter, sugar, brown sugar, egg, and vanilla.

When well combined, add flour, baking soda, and salt.

Mix with a hand mixer until well combined, and fold in chocolate chips by hand.

Scoop onto a greased baking sheet, as shown.

Bake for 8 minutes until golden brown.

Place half a graham cracker, one cookie, and one marshmallow onto a baking sheet.

Layer as shown. Broil in oven for 30 seconds until marshmallows are golden brown.

Add one Hershey bar on top while still hot. Serve and enjoy! *Makes about 16 cookies.
How Should I Store These Desserts?
You can store these in an airtight container on the countertop for a few days, but I usually store mine in the fridge so the chocolate chips chill and stay a little more firm. Some people like the texture of melted chips, so maybe try both options to see what you prefer.
Can I Use Mini-Marchmallows In This Recipe?
As I mentioned earlier, I like to change things up from time to time. The mini units could react to the oven process differently, so the texture would probably change. It could be a fun and unique approach to this recipe.
Should I use All-Purpose Flour For This Recipe?
For years I used all-purpose flour for my recipes that called for flour as an ingredient. Since I make a lot of homemade bread, and have done so for most of my life, I switched to bread flour and have found it works great for not only bread, but most all other flour based recipes.
