Strawberry Shortcake Salad
Have you ever made a strawberry shortcake salad? This recipe is one of our family’s favorite salads when strawberries are in season. We usually make it on Mother’s Day for Sunday brunch.
Once you make this salad you’ll be making it for family reunions, church luncheons, or neighborhood get-togethers. It only has five ingredients and you can make it at the last minute, it’s that easy to make.
It’s a creamy salad with whipped cream, pound cake, fresh strawberries, sweetened condensed milk, and mini marshmallows. There is something so special about this combination of flavors, you will smile with every single bite.
Did you grow up with your family making a Bisquick shortcake? I did and I still love it to this day. Sometimes I prefer easy, so I buy the Sara Lee Butter Pound Cake. It’s so rich, but I love it anyway.

Strawberry Shortcake Salad
Step One
I love that this recipe only has 5 ingredients! Please gather all of them before you start the recipe. Have fun putting this recipe together!
Step Two
Grab a large bowl and combine the sweetened condensed milk with the 8-ounces of Whipped Cream or 8-ounces of Cool Whip.
Stir until mixed thoroughly.
Step Three
Cut the pound cake into 1-1/2 inch pieces.
Step Four
Add the freshly sliced strawberries, pound cake, and mini marshmallows into a large bowl.
Finished Product
Fold in the cream mixture until mixed evenly. Refrigerate covered until you are ready to serve it. Serve it within 6 hours.
Strawberry Shortcake Salad Recipe
- 2 pints freshly sliced strawberries
- 1 pound cake or an Angel Food Cake (premade), cut into 1-1/2 inches pieces.
- 10 ounces mini marshmallows
- 8 ounces Whipped Cream or 8-ounces of Cool Whip
- 1-14 ounce can sweetened condensed milk

1. Grab a large bowl and combine the sweetened condensed milk with the 8-ounces of Whipped Cream or 8-ounces of Cool Whip.
2. Stir in the mini marshmallows.
3. Add the freshly sliced strawberries.
4. Fold in the cut pieces of the cake.
5. Refrigerate covered until you are ready to serve it. Serve it within 6 hours.
How do I store this strawberry shortcake salad?
I store it in the refrigerator covered in an airtight container for up to 6 hours.
Can I use a regular cake mix in this recipe?
A regular cake mix or a homemade cake may not be as dense as we would like because it will go soggy.
What about using an Angel Food cake?
You can use an Angel Food Cake mix or a pound cake because they are much denser compared to a regular cake mix.
Why do they call it Strawberry Shortcake?
Some people think the height of the cake is how the name came to be. Actually, shortcake is an old English term based on a cake that was a crispy and crumbly cake made with a lot of butter.
What’s the difference between shortcake and cake?
A regular cake is light and airy, whereas a shortcake is denser and more crumbly.
How long is strawberry shortcake good for?
It needs to be eaten within 1-2 days because the whipping cream gets soaked up in the cake and makes the cake soggy.
Can I make this salad with different fruit?
Fresh raspberries work great with this recipe as well as fresh peaches.
Can I use cans of fruit pie filling instead of fresh fruit?
Yes, I would use one to two cans of your favorite pie filling to substitute the 2 pints of fresh fruit.
How can I keep the strawberries fresh until need to use them?
First of all, don’t wash them or remove the stem until you are ready to slice them. They will keep for up to 7 days (depending on the freshness when purchased) if you place them on a few sheets of paper towels that are layered in airtight containers before placing them in the refrigerator. This sounds good but I am like you I’m so use to the Bisquik shortcake that the bought cake just tastes like nothing
or you can tell it’s bought. I might have to try this, if I can afford the strawberries.

I have a question Linda. In the ingredient list it calls for 8 oz of whipped cream. In the instructions it says to mix the whipping cream with the sweetened condensed milk. Do I start with 8 oz of whipping cream and then whip it?
