How To Make Turkey Cranberry Roll-Ups
Today it’s all about how to make turkey cranberry rolls-ups. I have updated and I’m reposting this recipe because it is one of my favorites and I hope it will be one of yours too! Do you remember going to Costco and tasting all the samples they shared with their shoppers?
One of my favorites was their turkey roll-ups that contained a cranberry cream cheese mixture with spinach and havarti cheese! They still sell them in the deli cases at the back of the store. Ohhh….my mouth is watering! They are so delicious!
After trying Costco’s turkey cranberry roll-ups, I decided to try making some of those scrumptious round little sandwiches myself.
I sent pictures of these roll-ups to my daughters and they all wanted the recipe. One daughter decided to make them as one of her Thanksgiving appetizers.
It’s so fun to try making something new, right? Do you love finger-food as much as I do?
When I go to parties around the holidays I love making new recipes and trying new recipes at family and friend get-togethers.
How to Make Turkey Cranberry Roll-Ups
Ingredients – Turkey Cranberry Roll-ups
- Cream cheese (softened): The main ingredient! A soft and smooth, mild-tasting cheese made from milk and cream which contains protein and calcium.
- Mayonnaise: Also known as “mayo.” A thick and creamy sour dressing made of eggs, oil, and vinegar or lemon juice.
- Can of whole-berry cranberry sauce: A sweet and tangy ‘whole berry’ cranberry sauce (not jellied). High in vitamins in minerals.
- Flour tortillas (large): A thin and circular unleavened flatbread typically made of white or wheat flour, water, salt, shortening or oil, and baking powder or soda. High in fiber, carbohydrates, iron, sodium, and calcium.
- Thinly sliced turkey: Thinly slice deli turkey meat typically made of turkey breast, broth, salt, natural flavorings, modified corn starch, and vinegar. Low in saturated fat and high in protein.
- Havarti cheese (it rolls up the very best!): A semi-soft Danish cow’s milk cheese with a mild, buttery and sweet flavor.
- Fresh spinach leaves: Fresh leafy greens with many nutritious health benefits. High in antioxidants which may improve eye health, decrease oxidative stress, and may help to prevent various cancers and diseases.

How to Make Turkey Cranberry Roll-Ups
This is the Christmas tree shape I took to a friend in the neighborhood. Yes, it’s a bit early for the holidays, but does it really matter? Look at how fun these turkey cranberry pinwheels look! Each bite is absolutely delicious!
People love receiving snacks from friends. What I love is that this snack is not too sweet but is very filling for lunch or dinner. They work great for appetizers as well.
Step One – Gather Ingredients – Mix Cream Cheese, Mayonnaise, and Cranberry Sauce
Gather of your ingredients. In a small bowl, combine the softened cream cheese, mayonnaise, and whole-berry cranberry sauce. I used a hand mixer to make it extra smooth.
Step Two – Evenly Scoop and Spread Cream Cheese Mixture onto Flour Tortillas
Scoop the mixture evenly onto the six large flour tortillas. You need to spread it to the outer edges because it will make the roll-ups stay together after rolling them up. It “seals” the roll-ups.
Step Three – Place 2 Slices of Turkey, Cheese and Spinach onto Tortilla
Place 2 slices of turkey deli meat in the middle of each of the large tortillas. Next, place the cheese on top of the turkey slices. Now, place the spinach leaves on top of the cheese.
Step Four – Roll Tortillas as Tight as Possible
Start rolling the tortillas towards the middle of the turkey, cheese, and spinach. Roll the tortillas as tight as possible.
Step Five – Cut Off the Ends of Rolled Tortillas
Cut the ends off to make the tortillas even, if desired. This is optional but it makes the rolls look better when you slice them. Mark and I just ate the ends as we cut them.
Step Six – Place Individual Rolls in Plastic Wrap – Twist Ends
After rolling them up individually, place the rolls in plastic wrap, twist the ends of the plastic wrap, so they won’t dry out.
Step Seven – Refrigerate Rolls – Remove Plastic Wrap – Slice 1 1/2 Inches
Place the roll-ups in the refrigerator for at least 4 hours, or overnight. Just before serving, remove the plastic wrap and slice roll-ups to about 1-1/2 inches thick to create turkey pinwheel sandwiches.
I highly recommend serving these with my “The Best Cranberry Salsa Recipe.” The turkey pinwheels are beautiful when displayed on a holiday serving dish or platter!

- 8 ounces of cream cheese (softened)
- 1/4 cup mayonnaise
- 1 14-ounce can of whole-berry cranberry sauce
- 6 10-inch flour tortillas (large)
- 12 slices of thinly sliced turkey
- 12 slices of Havarti cheese (it rolls up the very best)
- 2 cups fresh spinach leaves

How long will these turkey cranberry roll-ups keep in the refrigerator?
After two days they become a bit soggy, so hopefully, you and your guests will consume these very fast. Trust me, they will vanish off the serving tray.
Can I freeze the turkey cranberry roll-ups?
I would not recommend freezing these because they may become soggy after you decide to thaw them out.
What can I serve with these turkey cranberry roll-ups?
- Cranberry sauce
- Tossed salad
- Other appetizers
- Fresh fruit
- Lemon water
- Water with cranberries
- Sliced sweet pickles
- Deviled eggs
Can I use a different type of lettuce in these turkey cranberry roll-ups?
I really like the taste of the spinach in these tortilla roll ups! The spinach is high in nutrition. It contains many nutrients such as Vitamin A, Vitamin C, Iron, Potassium, folate, and Vitamin K. and holds up really well in the roll-ups. If you are interested in using a different type of lettuce I would recommend using romaine lettuce. It may not hold up as well as the spinach, but it does have a milder flavor than the spinach, so It depends on your preference.
Are there any additional herbs or spices I could add to these turkey cranberry roll-ups?
The flavor of these roll-ups are amazing as is! If you are interested in created a little different variation, I would recommend adding a bit of green onions or chives. I think either would complement the other flavors in the roll-ups nicely.

Oh, how I love this time of the year! I really hope you try making these turkey cranberry roll-ups. You can make them the day before and serve them to family and friends who drop in over the holidays. They are perfect to take to family get togethers or to serve at holiday parties!

Love the “new to me” way of dealing with all of the turkey leftovers! BUT, we (my daughter and her inlaws) are having a very unconventional Thanksgiving this year with flank steak, steak & ale pie, jalapeno mac & cheese. The only things that will be conventional are the stuffing and pies!! While I do like turkey and especially the leftovers, her family/inlaws don’t! So, we use Thanksgiving not for the food but for the family get together.
